Mbongo Tchobi, also known, as bongo is a traditional Cameroonian black stew made primarily with fish and often with meat including goat, lamb and beef. It’s distinctive color is achieved by burning “hiomi” (Mbongo spice) over hot open flame. Then it is blended and incorporated with other spices.
